Colorado peaches really are something special. I was looking for ideas on using up some peaches but didn’t want to bake anything. I served this no cook platter before dinner one night and my family went nuts! …In fact, if you wanna add your own extras to it, try topping it with some roasted pine nuts! Enjoy! – Tracy

Ingredients:

2 Balls Fresh Burrata

3 Peaches Sliced

Handful of Fresh Basil

1/2 tsp Red Pepper Flakes

Pinch of Kosher Salt

Drizzle of EVOO

Drizzle of good balsamic

Optional – Top with Pistachios
