Recipe:
Roasted Potatoes with Lime Cream Sauce
1 bag of fresh new potatoes
2 limes
1/2 cup sour cream
1/2 cup plain full fat yogurt
5 thyme sprigs
Cut potatoes in half the long way, toss with olive oil, top with kosher salt and pepper. Roast at 425 for 25-30 minutes. Add fresh thyme once out of the oven.
Mix sour cream and yogurt and add the zest of 2 limes. Serve on the side to dip the potatoes.
