A new Oyster and Cocktail bar coming to Denver

Denver, CO — James Beard award winner and chef at Annette, Caroline Glover, is leaving her mark on the Stanley Marketplace with her new bar in Denver, “Traveling Mercies.”

The new Denver Oyster and Cocktail bar, according to the team, is inspired by the hole-in-the-wall spots we seek out when we travel.

Traveling Mercies is set to open in December 2023 and is hoped to give the neighborhood something new and fun.

As for the chef, Caroline Glover, who remains one of the top 7 chefs to watch in Denver, said to visit the place mostly because it is a place she’d want to eat. Specifically, “a place to share a spritz and a dozen oysters before dinner or to linger with friends over shrimp cocktail, a wedge salad and a cold bottle of zippy white wine,” the team wrote in an instagram post.
