PopUp Bagels makes the move to Colorado

If you’ve scrolled social media in the last couple of years and wondered what all the bagel fuss was about, get ready — it’s heading to Colorado. PopUp Bagels, the cult-followed bagel chain that started out of founder Adam Goldberg’s backyard window in Westport, Connecticut, back in 2020, has become a full-blown phenomenon with nearly 50 locations across the country. The brand built its reputation on one simple but genius idea: hot, whole bagels served straight from the oven — no slicing, no sandwiches, no nonsense. Just grab it, rip it and dip it into one of their rotating schmear flavors. Yes, “grip, rip and dip” is legitimately their thing, and yes, people wait in line for it.

Colorado’s first PopUp Bagels will land in Boulder at 1247 Pleasant St. on University Hill, right near Broadway and Pleasant Street across from the Koenig Alumni Center on the CU Boulder campus. The company confirmed the Boulder spot is their first Colorado location, though they’re not tipping their hand yet on an opening date or whether more Colorado shops are in the works. Given that they’re on an aggressive expansion tear — with plans to hit 100 locations by end of 2027 — we wouldn’t be shocked if the Front Range gets more love soon. Boulder, your morning routine is about to get a serious upgrade.
