Iconic Denver Restaurant Tom’s Diner, Set to Reopen as Tom’s Starlight Tomorrow

As a Colorado native, I can count many nights/early mornings where I stumbled in to Tom’s Diner on Colfax in Denver after a concert. There just wasn’t anything that cured the itch for a late snack like that diner food did. Soon, the iconic Denver restaurant will be back with a new name and look to help those cravings again!

After months of construction, Tom’s Starlight is officially opening tomorrow (Wednesday, Sept. 28), at 601 E. Colfax Ave.

The menu will feature old-school menu items and a cocktail menu taking cues from tropical oases such as Palm Springs, California, Florida and the Caribbean.

The remodeled cocktail bar/lounge will also feature a patio with a 250-person capacity with 150 seats where the parking lot once was.
