Denver’s Los Dos Potrillos is cutting 100+ menu items to focus on family recipes — Here’s what stayed

Aug 25, 2026, 4:54 PM

If you walked into Los Dos Potrillos recently, opened the menu and thought “wait, where’d everything go?” — you’re not imagining things. The beloved Colorado Mexican restaurant just cut more than 100 dishes from its printed menu in what owners Daniel and Luis Ramirez are calling a return to the family recipes that started it all. Gone are items like the carne adobada pork, Monterey chicken and enchiladas del mar.

The move is part of a broader rebrand the Ramirez brothers are calling the “Authentic Family Tradition” menu, a streamlined lineup that puts the dishes rooted in their family’s heritage from Jerez, Zacatecas, Mexico, front and center. What started as one spot has grown into six locations across the Denver metro area — Littleton, Centennial, Highlands Ranch, Parker, Castle Rock and a newer Denver location — and over two decades, the menu had ballooned with additions that strayed from the family’s original recipes. The Littleton location at 10065 West San Juan Way recently reopened after a kitchen fire with a renovated space anchored by a “Wall of Traditions” paying tribute to the family’s culinary roots, and the new menu rolled out across all locations.

Before you panic: the good stuff is still there. The shredded beef burrito, barbacoa quesa tacos, gorditas, tortas, ceviche, tableside guacamole, chile relleno nachos, the Los Dos Potrillos fries smothered in green chile, their famous fajitas and the 50-year-old family recipe combination plate all survived the cut. Carnitas are still on the weekend rotation. Two new items were added as well. And here’s the real kicker — the Denver Post reports that if your old favorite got the axe from the printed menu, you can still order it. The dishes “left the pages, not the kitchen,” meaning the kitchen will still make them if you ask.

So really, this is less of a goodbye and more of a “you have to know the secret handshake now.”
